A tomato and cream-based sauce with flavorful, spiced meatballs
Meatballs (Kofta)
Ingredients
- 2 lbs. meat (ground beef, chicken, turkey or lamb)
- ½ onion, minced
- 1” ginger root, crushed
- 6 garlic cloves, crushed
- 1 egg
- 1-2 chilies (optional)
- 3T oil
Directions
In a large mixing bowl, slightly beat the egg. Mix in meat, minced onion, crushed ginger and garlic, and the meat masala (spice pack #1). For added spice, mix in 2 chopped chilies (optional).
In a fry pan, gently brown kofta to seal their shape. Set aside.
(Later, you will cook the kofta in the prepared tomato- based masala sauce…)
Sauce
Ingredients
- 1 lg. onion, thinly sliced
- 3T oil
- 1” ginger root, crushed
- 6 garlic cloves, crushed
- 14 oz. can tomato puree
- 14 oz. can broth (beef or chicken)
- 1 c water
- 1c light cream
- 2T chopped, fresh
- cilantro (optional garnish)
Directions
In a large pot, heat oil and fry onions on medium until golden-dark brown. Add crushed ginger and garlic, fry 2 min.
In a separate bowl, add ¼ c of water to the masala packet (sauce pack #2) and mix until a consistent paste forms. Combine with onions in pot and fry for 2 minutes.
Stir in tomato puree, can of broth, and water. Bring to a boil.
Add in browned kofta (meatballs). Cover and simmer ~30 until kofta are cooked through.
Turn off heat and gently stir in cream.
Garnish with cilantro, a splash of cream and serve over hot rice or with naan (flat bread).
